200g mixed berries

¼ large banana, sliced

maple syrup to serve

Place the flour, baking powder and cinnamon into a mixing bowl. Add the egg, vanilla extract, mashed banana, oat milk and tablespoon of maple syrup (or your alternative), and whisk until smooth.

Fold in the coconut and blueberries. Heat a large non-stick frying pan over a medium-high heat. Add half the oil and half the butter, and wait for it to melt.

Put large spoonfuls of pancake batter into the pan. You can choose how big to make your pancakes, depending on the size of your pan. (I like to do four at a time.) Cook for 1 minute, or until a few little bubbles begin to appear on the top of each pancake. Flip over and cook for a further 1–2 minutes.

Repeat with the remaining batter and stack the pancakes on plates to serve. Top with the mixed berries and your remaining sliced banana and slather in maple syrup (or your sweetener of choice).
